Shtayburne Farm Creamery
Shtayburne Farm Creamery is a family-owned and operated dairy farm located in the Finger Lakes region of upstate New York.
The farm was established by Mark and Mary Ellen Hostetler, who grew up on dairy farms and relocated to New York to start their own farm. Their son and daughter-in-law, Lorin and Alicia, added a creamery to the operation in 2010 and started implementing regenerative farming practices like cover crops, managed grazing, and no-till.
Today, their commitment to sustainable farming practices and producing high-quality dairy products for the local community continues. Lorin’s brother, Lance, now runs the creamery operations and has added new products to their offerings, including ice cream, Quark cheese, and fluid milk.
Shtayburne Farm Creamery’s cheese is processed and packaged by hand in small batches in their on-site processing facility. They offer a variety of cheeses, including Monterey Jack, aged, and flavored cheddar. Their oldest cheese is aged for ten years! In addition to aged cheeses, fresh cheese curds are available for purchase, as well as German Quark, a spreadable cheese high in protein and low in fat (similar to cream cheese).
The farm also produces delicious homemade ice cream. Starting in 2020, they began offering a dipping case with 12 different flavors. You can also opt for a milkshake, cold brew, or seasonal drink.
If you can’t decide between cheese and ice cream, get both! Shtayburne Farm Creamery’s customer favorite is their cheese and ice cream flights. These come in 4, 8, or 12 flights and can be customized to include any cheeses or ice cream flavors, giving you a chance to try them all!
You can support this family-run New York dairy farm by visiting their farm store in Rock Stream, NY. They have outside seating available with a beautiful lake view that you can enjoy while eating your cheese and ice cream. They also welcome children and pets and have plenty of lawn area for them to run around!
