In 2002, Paul began experimenting with ice cream in his tiny Manhattan apartment, sharing his creations with friends and coworkers who couldn’t get enough. Encouraged by their enthusiasm, Paul traded spreadsheets for scoops, learned the art of ice cream production, and eventually launched Adirondack Creamery. His commitment to keeping things simple and authentic became the cornerstone of his brand.

While each ice cream flavor at Adirondack Creamery starts with delicious combinations in mind, they’re also crafted with purpose, weaving together taste and storytelling.
